Are you looking for a sweet and tangy treat to enjoy this summer? Look no further than blueberry recipes! Blueberries are not only delicious but also packed with antioxidants and nutrients that are beneficial for your health. Let's explore some mouth-watering blueberry recipes that you can make to satisfy your cravings this season.

1. Classic Blueberry Pie

There's nothing quite like a classic blueberry pie to celebrate the summer season. The combination of juicy blueberries, flaky crust, and a hint of lemon zest is simply irresistible. Whether you're hosting a backyard barbecue or simply want to indulge in a homemade dessert, a blueberry pie is always a crowd-pleaser.

2 x - homemade pie crust or store bought pie crust (I didn't make the crust myself, so no recipe for that, sorry)

6 cups (3 pints/860g) - fresh blueberries

2/3 cup (135g) - granulated sugar

1/4 cup (31g) - all-purpose flour

2 tablespoons - cornstarch

~ 1/4 teaspoon - cinnamon

1 - 2 lemons for the egg wash

~ 1 teaspoon - lemon zest

2 tablespoons - fresh lemon juice

1 tablespoon - unsalted butter (cold) cut into small cubes

1 egg + a splash of milk/cream to make the egg wash

Instructions 

  • Preheat your oven to 425°F.

  • Grease your pan with butter and flour to help with sticking. Adding a sheet of parchment paper (NOT wax paper) to the bottom of your pie dish will also help.

  • Flour a large surface and roll out your first pie crust, then shape it to fill your pie dish.

  • Zest and juice your lemon.

  • In a medium sized mixing bowl combine your blueberries, sugar, flour, cornstarch and cinnamon and mix lightly to cover the blueberries.

  • Add the lemon zest and juice, and mix thoroughly until the mixture starts to become wet and pinkish/purple in color. You don't want any massive clumps of dry mix left on/around the blueberries.

  • Add the mix into your pie dish, and evenly space out your cubes of cold butter on top. Set aside

  • Roll out and prepare your second pie crust, then cover your pie with the top crust.

  • Whisk your egg and milk in a small mixing bowl and lightly brush the egg wash over the top of your crust (this gives the pie that beautiful golden brown color and slight crunch).

  • Bake for 25 minutes at 425°F, then reduce your heat to 375°F, and continue baking for 30 - 50 additional minutes. Make sure you put a pan or foil under the pie dish while it's baking, the pie filling will likely boil over the edge of your dish.

  • You'll also want to cover your pie in foil once you get your crust golden brown to prevent your crust from burning.

  • Allow at least 4 hours of cooling time before you cut and serve it, unless you want pie soup

2. Blueberry Smoothie Bowl

Start your day on a refreshing note with a blueberry smoothie bowl. Blend together frozen blueberries, bananas, yogurt, and a splash of almond milk for a creamy and nutritious breakfast option. Top it off with granola, chia seeds, and fresh blueberries for added texture and flavor. This is a recipe that is a bit more to individual preference and taste, however I recommend using the yogurt liberally for texture and taste. Adding a little honey and lemon for some zest can bring the flavors out really nicely. 

3. Blueberry Chia Jam/ Overnight Oats

Looking for a healthier alternative to traditional jam? Try making your own blueberry chia jam. This simple recipe requires just a few ingredients – blueberries, chia seeds, and a touch of sweetener. Spread this delicious jam on toast, pancakes, or yogurt for a burst of flavor.

This can also be added to oats to make overnight oats with blueberries. In a mason jar or a similar sized container, combine the following ingredients:

-1/2 cup of rolled oats (I use Quaker or the Store brand)

-1 tbsp chia seeds

-1 tbsp honey

-1/2 cup of yogurt (substitute non-dairy for preference)

-1/2 cup regular, oat or almond milk

Stir mixture and let sit in the refrigerator over night or for a few hours before enjoying!
